Our Craft

How We Make It

Our commitment to traditional methods ensures that every product maintains its authentic flavor, nutritional value, and purity.

In an age of mass production and shortcuts, we steadfastly maintain time-honored processes because we believe quality cannot be rushed. Every extra hour spent hand-churning ghee, every careful measurement of spices, every quality check – these aren’t just steps in our process. They’re our commitment to you.

Traditional Ghee Making Process

1

Milk Collection

We source fresh, pure milk from carefully selected farms where cows are grass-fed and treated with care. For our A2 ghee, we specifically work with indigenous desi cow breeds. The milk is collected daily in the early morning to ensure maximum freshness and quality. Each batch of milk undergoes quality testing before entering our production facility.

Curd Formation

The fresh milk is boiled and cooled to the perfect temperature, then cultured with traditional starter cultures to form rich, creamy curd. This process takes 8-12 hours and is crucial for developing the characteristic flavor and nutritional profile of authentic ghee. The curd is monitored throughout to ensure optimal consistency and taste.

Hand Churning (Bilona Method)

Using the ancient bilona wooden churner method, the curd is hand-churned for hours to separate the butter. This traditional technique, though labor-intensive, preserves the natural nutrients and produces butter with superior taste and texture that machines cannot replicate. The rhythmic churning is an art passed down through generations in our family.

Slow Heating

The fresh butter is then slowly heated over a controlled flame. This gentle heating process allows the water content to evaporate and the milk solids to settle, resulting in pure, golden ghee. The temperature and timing are carefully monitored to achieve the perfect color, aroma, and consistency. This is where the magic happens, transforming butter into liquid gold.

Filtering & Packaging

The liquid ghee is carefully filtered through fine muslin cloth to remove any remaining impurities. Once cooled to the ideal temperature, it’s packed in food-grade containers that preserve its freshness, aroma, and nutritional properties. Each batch is labeled with production date and quality certifications, ensuring complete transparency and traceability.

Masala Blending Process

1

Spice Selection

We carefully select premium whole spices from trusted suppliers across India. Each spice is hand-picked and inspected for quality, color, and aroma. We only choose spices at their peak freshness to ensure maximum flavor in our masala blends. Our relationships with farmers span decades, built on trust and mutual respect.

Cleaning & Sorting

All spices undergo thorough cleaning to remove any foreign particles or imperfections. They are then sorted by size and quality to ensure uniformity in the final blend. This meticulous process guarantees that only the finest ingredients make it into our masalas. Each spice is treated with the respect it deserves as a gift from nature.

Traditional Roasting

Following age-old recipes, specific spices are dry-roasted to enhance their natural oils and deepen their flavors. The roasting is done in small batches at controlled temperatures to preserve the aromatic compounds while developing the complex flavor profiles that define authentic Indian masalas. This step requires years of experience to perfect.

Grinding & Blending

The roasted and raw spices are ground to the perfect consistency using traditional stone mills for some varieties and modern grinders for others, depending on the masala type. Our secret family recipes guide the precise proportions to create balanced, flavorful blends. The grinding process is carefully controlled to prevent heat buildup that could damage delicate aromatic compounds.

Quality Check & Packaging

Every batch undergoes rigorous quality testing for color, aroma, flavor, and consistency. Once approved, the masalas are immediately packed in airtight, food-grade packets to lock in freshness. Each packet is sealed and labeled with complete product information and best-before dates. Our packaging is designed to protect the masala from moisture, light, and air while being environmentally responsible.
